make your own frozen mulitgrain (tropical) waffles.

I love a good box mix - I know, it should be sacrilegious for someone who likes to cook but I think if the choice is 1) cook it yourself at home, 2) have frozen waffles with a lot more food additives or 3) go out for food that is even worse, I will take the former.  I use and reuse this Trader Joe's multigrain baking mix over and over again.  With the recent rainy mornings, nothing is better than a dose of warm maple syrup to go with the whole grains....

TJ's multigrain baking mix (follow the measurements on the box)
1/4 cup multigrain oatmeal
1-2 tbsp flax seeds
dash canola oil 
1 egg white
milk (about 2-3 tbsp, add less or more if the mix is too runny or dry)
dash vanilla extract
1-2 tbsp chopped or shredded coconut (optional but it makes it tropical)
Mix the baking mix ingredients according to the instructions on the box.  Add the oatmeal, flax seeds, vanilla and coconut (if using).  Preheat waffle iron.  Ladle enough batter to coat the bottom of the iron, press to cook evenly.  

If freezing: slightly undercook the waffles (just don't let them turn a golden color), cool on a baking rack completely.  Once cooled, slip into zip lock bags, seal tightly and toss in the freezer.  When ready to eat, simply pop them in the toaster.

If enjoying right away: cook until golden, top with warm maple syrup or to make them island-y, drizzle with melted guava jam (thinned with a splash of water).

  1. Yum, I bet the coconut gives these such a great toasted flavor. It might be a bit too addicting to get a waffle iron, but still a lot of fun :)
