The spices, the veggies, steaming basmati rice, the hot naan skating around a plate picking up sauce.... I saw a bunch of eggplant at the farmer's market and had a craving for eggplant vindaloo. I decided to mix it with chicken which isn't exactly traditional but Indian food is so forgiving, I'm sure the eggplant won't mind. Piled high in a bowl-like plate, I was ready for movie night on the couch with my Maximilian. </span></span><br />

Rice and I have an uncomfortable relationship - mostly because rice doesn't cooperate and needs to work on its communication skills. The pressure cooker coupled with my new burner plates (to distribute the heat evenly, instead of burning everything) worked perfectly. Basmati rice took just 7 minutes in the pressure cooker! </span></span><br />

Oh and more mini pumpkins than one person in a one bedroom apartment should have. My place needed a little fall-readiness anyway.... With my new pressure cooker, no less. I read an article recently about pressure cookers and didn't consider them before that. By time I finished the article, I told my mom I wanted one. She read it and said the same thing. I always thought they were stodgy, dangerous and old fashioned. oven to 375 degrees. Spray a baking dish with olive oil spray and
place in oven. The dish will need to heat up at least 10-15 minutes (at
least 5 minutes at full temp) before adding ingredients. Meanwhile, in
a bowl, whisk eggs, milk, herbs. Season with salt and pepper and add squash. Remove baking dish from oven and pour egg mixture then sprinkle the top with goat cheese.

I have only made one actual meal, otherwise my panini press has seen a lot of action! Fortunately, I have a ton of veggies left over from the weekend festivities - so much that the strawberries were starting to look a little bleak. I almost titled this post "Beets: A Love Story" but refrained! Regular red beets and I aren't as good of friends because the threat of staining everything is not for me. I've talked so much about the beet greens, now it is time for the actual beets. tightly. Place beets in oven. The cooking times vary based on 1) your
oven and 2) the size of beets. Out of the beets pictured, the smaller
ones cooked for 45 minutes each while the largest one was in the oven
for an hour. I test mine wearing an oven mitt - if they are fairly
soft, remove and cool in foil. </span></div>

While oven is heating, gently warm a corn tortilla (I either put it in a small non-stick skillet for less than a minute or stack a few in the oven wrapped in foil, taking them out one by one). Spritz a baking pan with a neutral oil spray (I used canola). Spread goat cheese on one side of the tortilla. Top with shredded chicken and beet greens. Roll gently and place in pan. Repeat with remaining tortillas. I stopped when I ran out of chicken and greens so I would have enough for leftovers. Pour enchilada sauce over tortillas and top with cheese. Bake about 15-20 minutes. </span></div>

<span style="font-size: x-small;">A lovely client was telling me about the huge fava bean crop and asked me if I would like some. Since I've never cooked with them before, I was up for the challenge. However, later at dinner that night, she said she left me a little something by my chair and winked. I found a gigantic bag of fava beans! Knowing I couldn't possibly shell all of them, I searched online to find you can roast them with similar results. The results weren't exactly similar because the outer layer was still pretty tough, but they are okay to puree to turn the beans into pesto. </span><br />

<span style="font-size: x-small;">The pesto is perfect and mellow - great for crostini for an afternoon on the patio with white wine or swirled into hot pasta, garnished with lemon zest and fresh herbs (my parsley has become mutant)....</span></div>

Now that the spring vegetables are winding down and giving way to summer ones, I thought it would be great to enjoy the last bit of asparagus while I can! With about 1-2 minutes left on the pasta timer, add the frozen peas. Drain pasta (removing peas) and return to pan. </span></span><br />
