installation day treats.

I have a tradition of bringing in treats whenever we do installation at the gallery.  After all the lifting and running around, I think everyone deserves a little treat!  M loves the fat free brownies jazzed up a little bit with his favorite (and mine) combination of triple chocolate and orange.  Very French combination with a big help from Trader Joe's as it is a simple box mix.

1 box brownie mix
1 container chocolate fat free yogurt
2 tbsp - 1/4 cup chocolate chips (stops them from being truly fat free but at least they are spread out in the entire pan)
zest of 2-3 oranges (scrubbed and cleaned to remove wax from any store bought oranges - mine came from the family tree)
cooking spray
Preheat oven to 350 degrees.  Add mix to a medium sized bowl.  Add yogurt.  Stir to combine.  Add chocolate chips and zest.  Stir again.  Spray a 9 x 9 baking dish with cooking spray.  I use olive oil spray which isn't traditional for baking but I actually like it anyway.  Bake for 25 minutes or until a toothpick inserted in the center comes out clean.  

A few other flavor combination ideas for this go-to mix.... 

Raspberry (or cherry or strawberry) yogurt in the mix, 2 tbsp heated raspberry (or cherry or strawberry) jam drizzled on top (once the batter is in the baking dish) and swirled with a toothpick.  The director of the Hammer Museum came back for seconds and thirds for this one.

Same as above - but with vanilla or chocolate yogurt in the mix and heated peanut butter swirled on top.  The amazing artist Mel Bochner loved this.
