quick and easy tilapia.

My parents have a great fish counter at their local market - this past weekend they gave me a care package of tilapia, salmon along with the usual orange and grapefruit from their garden.  I found a great, healthy recipe on Epicurious.com for tilapia and it turned out fantastic (I made minor changes)!  After a long and busy Tuesday, I was ready to relax with white wine and this dish....
spicy tilapia with pan sauce.
two small slices of tilapia
1 cup cherry (or other small variety) tomatoes
1 garlic clove, minced
2 tbsp chopped kalamata olives
2 tbsp fresh chopped herbs - parsley, basil, oregano or thyme (I used thyme)
juice of 1/2 lemon
pinch chili flakes (to taste)
drizzle olive oil
salt and pepper to taste

Add tilapia to a dish, drizzle with olive oil and add lemon juice, salt and pepper.  Marinade 5 minutes.  Preheat non-stick pan over medium heat.  Add fish and cook 3 minutes per side.  Remove.  Add herbs, chili flakes and garlic, cook until fragrant (less than a minute).  Add tomatoes and olives.  Saute 3 minutes, until tomatoes are tender.  Remove and pour pan sauce over fish.  
As a side dish, I roasted brussel sprouts - saving the leftovers for a salad later in the week!  

Suggested wine pairing: Sauvignon blanc or any crisp white wine. 

A side note: My favorite piece is back from the framer (long story) - so I am thrilled to say this was my view during dinner....
