So I had a request for an easy quick lunch that doesn't require microwaving. One of my favorites is a couscous salad. Why? It can be made in minutes, uses up whatever I have plus a few pantry staples and paired with a green salad - you have lunch!
The best way to make couscous is to pour some in a bowl (about 1/2 - 3/4 cup is good for one), then pour boiling water about 1/2 inch above the couscous. Put a dish towel over the bowl to allow the water to absorb. I really like the whole wheat option from Trader Joe's....
To use up what veggies I might have, I will chop them up to a dice and saute them with a little olive oil, salt and pepper. This works well with leftover grilled or roasted veggies as well. This time, I used onions, carrots and zucchini....
A few pantry staples for couscous salads include sun-dried tomatoes, golden raisins, pine nuts and Trader Joe's balsamic dressing. Add a fresh chopped herb (I used parsley) and maybe a quick squeeze of 1/2 a lemon and lunch is ready....
