whistler wrap.

Last August, my mom and I went to British Columbia, Canada - specifically Vancouver and Whistler.  Vancouver is a great city with amazing food (Granville Island was a fave) while Whistler was more of a resort town.  Our best meals included Greek, Japanese and what we have come to know as the Whistler Wrap.  Not the actual name for it but we got these on our way up to the summit and it was the best wrap I ever had!  The recreation....

*makes about 2 wraps
1/2 cup couscous
1/2 cup water
1/2 onion, chopped
1 cup garbanzo beans (drained and rinsed)
1 cup frozen chopped spinach (defrosted and water squeezed out)
1/2 tbsp curry
1/2 tbsp garam masala
salt and pepper to taste
 mango chutney
2 tortillas, slightly warm (I used Ezekial but they are slightly heartier and a little drier)
Make couscous: add couscous to a bowl and pour over with boiling water.  Drape with a kitchen towel for 5 minutes.  Fluff with a fork.  Saute the onion until lightly carmelized.  Add the remaining ingredients and season to taste.  Remove from heat and stir pan mixture in with couscous.  Add (about) 1/2 the mixture to the tortilla and wrap up.  Dip in mango chutney - this can also be spread on the interior of the tortilla for portability!
