black bean soup.

Since my viral plague won't go away, I thought maybe some spicy food would just scare it away....  My mom is a big believer in spicy food as a cure all.  I made a quick and easy black bean soup to have with a modern take on heuvos rancheros for dinner last night and lunch (with a shrimp quesadilla) the following day.

1/2 red onion, diced
14 oz can of diced green chilis
1/2 jalapeno, minced (partially deseeded, keeping some in for heat)
1 can black beans, drained and rinsed
dash cumin
dash chili powder
salt and pepper to taste
1 cup vegetable stock (low sodium)
olive oil
toppings:  sour cream, fresh (in season!) avocado

In a medium pot drizzled with olive oil, saute onions over low-medium heat until translucent.  Add jalapeno and cook another few minutes.  Add green chilis, black beans, stock and spices.  Bring to a boil over high heat and simmer for a couple minutes for the flavors to combine.

1 corn tortilla
1 poached egg
1 tbsp. sour cream
thin slices of avocado
thin salsa or ranchero sauce
salt and pepper to taste

Warm tortilla.  Assemble by spreading a thin layer of sour cream on the tortilla and arranging avocado.  Add egg, sprinkle egg with salt and pepper.  Drizzle salsa or ranchero sauce generously on top.
