Rounding out my chorizo and potato menu is the simplest of them all: a potato salad. No, this isn't dripping with mayonnaise nor is it my favorite German or French salad. It is something in between - creamy tang from mayo but a bite from mustard....
mayo & mustard potato salad.
1/2 pound of potatoes, cooked (peel on), quartered
2 tbsp mayonnaise
1/4 cup stone ground mustard (with seeds)
1 tbsp honey or agave
salt and pepper to taste
2-3 chopped scallions (green parts only)
Mix mayonnaise, mustard, honey or agave and salt and pepper in a bowl. Add potatoes and stir gently to combine. Garnish with scallions and keep chilled.
