easy pita pizzas.

With my trip to Germany finally here, the art world officially on holiday and not much left to do besides finish laundry and pack, I had my girlfriends over for a wine and clean-the-fridge-out kind of night.  I love to make my own pizzas but sometimes messing with the dough (even store bought) is a hassle.  Enter a whole package of pita I found while rooting around in the fridge.  Since I also had fresh figs and tons of goat cheese that needed to go, I made cheater pizzas.  They were gone in a flash....  Unfortunately the first photo is terrible....

goat cheese (about 3 tbsp per pizza) - I used herb goat cheese
fresh figs, cut into quarters (lengthwise), about 2 1/2 figs per pizza
balsamic reduction
handful fresh chopped basil
fresh pepper
Preheat oven to 400 degrees for at least 10-15 minutes.  Heat a saucepan over medium-high heat.  Add about 1/4 balsamic vinegar.  Boil until reduced by one half.  Remove from heat.  Arrange pita on baking sheets.  Top with figs, goat cheese and basil.  Drizzle with balsamic reduction and finish with a crack of fresh pepper over each pizza.  Cook about 10 minutes until pizza is crisp.  Cut into quarters and serve.  

 My fabulous friends brought along some great salads and of course, there was no short supply of wine and desserts, including macarons....
