italian summer (no cook) dessert.

With the weather really heating up and the summer produce in full swing, I made a dessert that didn't require an oven or much prep.  What goes better with gorgeous blueberries and strawberries from the farmer's market than a little booze and sweet toppings?!  Limoncello and fresh mint brought out the flavors of the fruit, add a dash of creamy topping,* candied ginger and a side of amaretto cookies....  Pretend you are in Italy for effect. 
 *I originally wanted to make whipped lemon ricotta but after 30 minutes of trying to get the ricotta to whip, I gave up.  It was like chalky liquid.  Still trying to figure out what I did wrong but since I was heading to a party, all I could do was run by the nearest store and buy Cool Whip!  It worked in a pinch!

(serves about 6)
2 baskets strawberries
2 baskets blueberries
4 tbsp limoncello
2 mint stalks (about a small handful of mint leaves), chopped
small handful candied ginger, chopped
Cool Whip
amaretto cookies
Hull and cut strawberries in half.  Add with blueberries to a bowl.  Drizzle with limoncello and chopped mint leaves.  Cover and place in fridge for at least 20-30 minutes for flavors to combine.  To serve, mound fruit on a plate, top with Cool Whip and candied ginger.  Arrange amaretto cookies on the side.
