easy egg white frittata.

I love egg white frittatas - all the benefits of a quiche, minus the guilt!  Unfortunately, I'm not too great at the whole inverted plate thing and I can across a recipe that made one all in one pan in the oven.  The secret?  Preheating the oven with the oiled baking dish so it forms that perfect crust....
egg white frittata.
6 egg whites or 1/2 container liquid egg whites
1 tsp whole wheat flour
salt and pepper to taste
2 tbsp fat free feta
splash milk 
1 tbsp dried herbs (I usually use either herbes de provence or oregano)
assorted vegetables - either roasted leftovers or in this case, 2 green onions, a couple sundried tomatoes and 1/2 a tomato)

Preheat oven to 375 degrees.  Spray a baking dish with olive oil spray and place in oven.  The dish will need to heat up at least 10-15 minutes (at least 5 minutes at full temp) before adding ingredients.  Meanwhile, in a bowl, whisk eggs, milk, chopped veggies.  Season with salt and pepper and add herbs.  Remove baking dish from oven and pour egg mixture.  Since the oven is hot, it will cook quickly - maybe within 10 minutes.  For a little crust on top, place under the broiler for a minute or two....
