Banana bread is one of my favorites because you can make it any time of the year and it uses those almost spoiled bananas. In fact, it is better not to use barely ripe bananas, the darker the better! A recent breakfast....
3 bananas (mashed)
1 1/2 cups flour
1 tsp each salt and baking soda
1 cup sugar
1/4 butter, melted and cooled
Preheat oven 325 degrees. Mash bananas in a bowl. Add sugar, mix well, then add egg and butter. In another bowl, mix dry ingredients. Add dry ingredients into the banana mixture, stir to combine. Pour batter into a lightly greased bread loaf pan. Bake about 55-60 minutes. Cool in pan 10 minutes then turn onto a rack to cool completely.
Great with pumpkin or apple butter right now....
