shrimp orzo salad.

One of my favorite Ina Garten (Barefoot Contessa) recipes is her shrimp orzo salad (recipe can be found here).  With the LA weather heating up again during the day (I am convinced it is earthquake weather - hot during the day and freezing at night!), I was craving the orzo salad but didn't have all of the ingredients.  Swap the cucumber for an avocado, lime juice for lemon and add red pepper flakes to make up for the lack of fresh herbs and I have a whole new lunchtime salad....
shrimp orzo salad with avocado and pepper lime dressing.
1/2 cup cooked orzo
1/2 cup cooked shrimp
1/2 avocado, diced
1 scallion, minced
small chunk of feta, diced
juice of one lime
drizzle good olive oil 
pinch of red pepper flakes
salt and pepper to taste
In an airtight container, add pepper flakes and lime juice.  Drizzle in olive oil, whisking to blend.  Add remaining ingredients and stir.  Season with salt and pepper to taste and keep chilled.
