Indian food is like comfort food to me. Cold winter-y nights are best counteracted by hot spicy food, warm naan and pillows of basmati rice. But with the recent warm weather coupled with my Indian cravings, I made a salad to enjoy some exotic spices cold....
indian lentil salad.
cooked lentils
cooked rice (quinoa also works)
1/2 chopped onion
1 bunch broccolini (or other dark leafy green - kale, spinach, chard)
ground turmeric
garam masala
ground curry
juice of 1/2 lemon
rice wine vinegar
olive oil
salt and pepper to taste
optional: garbanzo beans
Preheat a skillet over low-medium heat. Add oil and onions. Saute until slightly translucent and add broccolini. Add spices (be generous) and saute until cooked down, about 4-5 minutes. In a bowl, combine rice and lentils with a drizzle of olive oil, vinegar and lemon juice. Stir to mix. Add cooked veggies and stir to combine. Serve cold or at room temp.
