I finally used up my eggplant and am happy to report I am not sick of eggplant! Not that I would go buy another one for next week but different dishes have kept it interesting. The final lunch: eggplant panini.

2-3 slices of eggplant (marinaded and grilled - see day 2)
2 strips jarred bell pepper
2 slices goat brie
bunch of microgreens (or lettuce)
hummus
pesto
cracked pepper
really good bread
Cut bread in half (or 2 slices) - spread 1 side with hummus, the other with pesto. Layer eggplant, bell pepper, and brie. Top with greens and sprinkle with pepper. Enjoy!
